Korean Style Dinner With Instant Ramen Noodles & Kimbap

Korean food has become the latest food obsession in my house. When Avon started selling Jin Ramen I was sent a quarantine care package from Avon (#AvonRewards. Thanks Avon!) and we discovered that this was not your usual cup of noodles. They were so delicious! I ordered more and since it's so easy to make they've become the mid week, what are we going to eat, it's too hot to cook, go-to meal.

Earlier in self isolation I taught myself how to make sushi when my local restaurant closed and I realized how easy and fun it was to do it yourself. My mom, who was also teaching herself new recipes during her reclaimed free time, came across a cooked alternative to sushi from Korea called Kimbap. After hours binge watching Korean cooking on youtube we built up enough confidence to try some of the recipes ourselves.

Here's a Korean style meal we made featuring Bunsik Style Shrimp Kimbap and Instant Ramen. For Banchans (side dishes) I fried up some leftover shrimp and then I took Japanese style Onigiri (rice balls sometimes shaped as triangles) and made them unhealthy by deep frying them. Lol. I like fried foods too much and the fryer was already ready, so why not!

How did I do?

I have some other soup recipes I cant wait till fall to try like Sundubu (tofu soup) because I'm not a fan of tofu but I'm told this soup will change my mind, and Mandu Jeongol because I do love dumplings!!!

What's your favorite Korean food? Do you have any recipe recommendations?
